Camera only lets me change between two aperture numbers. HELP?

Some cameras are like that. My daughter has a Nikon compact that allows only two apertures. Look at the handbook and check. If so, either live with it or get a DSLR which will give you much more control. Actually two apertures may be all you need for control.
